Junior Suites include the Longueville Suite with an 18th-century French four-poster bed and the Pascali Suite (590 sq ft) on the second floor. The Royal Highness Junior Suite (485 sq ft) includes a bay window with a soaking tub. The Family Suite (590 sq ft) has two separate bedrooms, with double or twin beds in each. The Tower Suite (645 sq ft) has a separate lounge and stone bath with an oversized shower and direct access to the gardens and pool. The Cottage Suite (1,720 sq ft) is a two-bedroom cottage with a lounge, dining area, and original Norman-style features. Standard amenities include Bramley toiletries, bathrobes, Smart TVs, tea/coffee facilities, and complimentary Wi-Fi.

Longueville Manor's restaurant offers dining in the 15th-century Oak Room or the Garden Room. Executive Head Chef Andrew Baird focuses on local Jersey produce. The menu includes meat, seafood, and vegetarian dishes, garden salads, and Jersey Royals or French fries. Dishes include grilled fillet of Angus beef with slow-cooked sticky rib and potato gratin. The wine cellar stocks over 4,000 wines, Champagnes, and Ports, with some rare bottles. The wine list features over 600 selections.
