Fine Dining Restaurant
VL Restaurant provides fine dining, serving dishes based on guest preferences. The restaurant is open Tuesday to Saturday, with a wine list selected by Michael Vaughan. Breakfast features a menu with a Full Irish Breakfast, omelettes, fresh and smoked fish, and vegetarian and vegan options. Fresh scones and bread are baked daily. The hotel uses local ingredients where possible, including fish from Carrigaholt and goats cheese from St. Tola's in Inagh. Meats are sourced from Pat O Connor Butchers in Limerick, duck from Feighcullen Farm in Rathangan, and lamb from Slaney Meats.
